Whole fish?

Does anybody want to share thier best/easiest whole fish recipe! I have a couple of lovely fresh trout for dinner.

Pan fried in butter with slivered almonds - an oldie but still a goodie

jasandlis, you can't get much simpler and easier than this that we used to enjoy when our then elderly neighbours shared the results of their fishing outings.

whole trout, gutted
butter, parsley sprigs, lemon juice

Wash and dry the trout.Remove the head and tail if desired, otherwise shield them with aluminium foil.
Make 2 or 3 skin-deep slashes in the skin on one side of the trout.Place a little butter into each slash and fill the gut cavity with plenty of parsley.Weigh the trout, then place it in a well greased microwaveproof dish.Sprinkle generously with lemon juice.Cover the dish with plastic wrap and make 2 or 3 holes for steam vents.
Cook on 100% power allowing 3-4 minutes per 500g.
The trout will be beautifully moist and the flesh lifts easily off the many fine bones.

100 or more whole fish (heads, tails etc) into a egg batter and fry in butter. Can not be beaten.(.whitebait.)
