Easy Piccalilli recipe

Please does anyone have a EASY recipe for piccalilli. Cheers.

Piccalilli

makes 1.8 kg

1 large cauliflower
400g pickling onions
900g mixed veges - zucchini/cucmber/beans/capsicu-
m
225g salt
2.4 litres water
200g sugar
2 cloves garlic, crushed
2 tsp mustard powder
1 tsp ginger powder
1 litre white vinegar
¼ c plain flour
1 tab tumeric

Divide cauli into smallflorets, peel and quarter onions, seed and finely dice zucchini and cucumber, top and tail beans and cut into 2.5 cm lengths.

Layer veges in a bowl, sprinkling layers with salt.Pour water over, cover and stand 24 hours.

Drain veges and discard brine.Rinse well and drain thoroughly.

Put sugar, garlic, mustard, ginger and 900 ml vinegar in preserving pan, heat gently, stir until sugar dissolved.Add veges and bring to boil, reduce heat and simmer 10 - 15 min until almost tender.

Mix flour and tumeric with 100 ml vinegar and stir in, stir and simmer 5 min until thick.

Use within 1 year.

Cauli Pickle.
500g onions, sliced
1 large cauliflower, cut into small florets,
3 Tbsp salt,
2 litres malt vinegar (approx)
3 dried chillis
1/2 c flour
2 Tbsp English mustard
1 Tbsp curry powder
1 c brown sugar
100ml apple or pineapple juice

Place the sliced onions and florets of cauli in a glass or pottery bowl (not metallic). Sprinkle with salt , give a good stir with your hands, and leave overnight covered with a tea towel.
Next day, drain off any liquid and put the veges in a large saucepan. Pour on the malt vinegar until covered and then add the dried chillies.
Bring to the boil and simmer for 10 mins or until cauli is cooked but still crisp. In a bowl blend the flour with the mustard, curry powder and sugar then mix to make a smooth paste with the juice.
Stir this gradually into the vinegar and vege mixture until nicely thickened. This should take about five mins. Have your jars sterilised and hot, then spoon mixture into each jar. Put the lids on and leave to cool.
