How do I Cook Freshly Smoked Fish?

I've been given two big pieces of freshly smoked blue cod. It has a powerful smoky smelland I'm not sure what to do with it. The only way I know how to cook smoked fish is with a parsley sauce or kedgeree- neither of which my husband will eat.

Make a salad with it - boiled new potatoes, spring onions, avocado and flaked smoked cod, bound with a vinaigrette or home made mayonnaise.Serve it lettuce leaves.

You could make fish cakes with mashed spud and some flavourings, finely diced spring onion, parsley, dill, maybe a little chilli, then serve with a fresh salsa or a favourite sauce.

Thank you both. I used davidt's idea, using everything except the avocado from my garden. It went down a treat. I saw a recipe on here for ham rostis and wondered whether I could substitute the smoked fish. That will be the next thing to try. My limited previous experience with smoked fish has been from a can.

I don't think smoked fish would do very well in a roesti mix; I think it would go tough and stringy.It really doesn't need any more than very gentle heat and will be better not heated at all.

Don't cook it - just eat it with salads, mayo, tartare sauce whatever you like.

My aunt used to cook smoked fish in milk, though I like the idea of not cooking it at all, especially as it is Blue Cod, my favourite fish.

If its fresh the smoking of fish actually cooks it so eat as is.yummo!

HOT-smoked fish is cooked during the smoking process - Ready to eat, as you found out.

COLD-smoked fish is just smoked and not cooked and requires cooking. as per the parsley sauce etc

There is a huge difference. Get them mixed up and you'll be binning your meal ;)

edit: and either can be "freshly smoked"

No - it will be a hot smoked and so "cooked" fish she's got! And so she can simply eat it!

It was light and flaky, so definitely cooked. We had some strips 'as is' with undressed salad and hot new potatoes, and the rest I saved just for me in a delicious kedgeree. I took on board the heating comment and waited until the rice mixture was almost ready to serve, then stirred through the raggedy leftover bits. I don't think I could eat tinned smoked fish again after that. A huge sponge cake filled with cream and strawberries went as thanks to the friend who gave it to us. It's funny how he is just as rapt with a simple cake as we were with his fish.

Sounds like the perfect friendship.

I'll be smoking a trevalliy for our dinner tonight and will serve it warm from the smoker, with new potatoes and runner beans.

I'll give you more notice next time.We have just discovered a fantastic fishmonger in Manukau City, with wonderfully fresh fish at low prices - $10.90 for a fine fat trevally.

A fishmonger may be a bit of a waste on me just got home from a week on the boat, snapper Kahawai and or trevelli cooked within an hour of catching every day. off again for another week next week.
