Potato Pie for Jess

4 large boiled potatoes, 3 hard boiled eggs, 3 chopped bacon rashers, 1 large onion, 1/4 cup butter, 1/4 cup flour, 1 tsp mustard

approx 2 cups milk, 1/2 cup grated cheese, 1/2 tsp salt, 1/2 tsp celery salt, shake of pepper, 1 tbsp butter, 1 cup soft breadcrumbs.

Boil, cool, then slice the potatoes 1/2 " thick. Chop, halve or quarter the hard boiled eggs.

In a medium sized saucepan, melt butter and cook in it the bacon and onion.
When onion is tender, but not brown, add the flour and mustard.
Add the milk in 3 parts, boiling and stirring while adding.
When the sauce has boiled after last addition, remove from heat and stir in cheese and seasonings.

Arrange half the potatoes and eggs in an ovenware dish. Cover with half sauce. Add remaining potatoes, eggs, then pour on rest of sauce.

Make breadcrumbs, melt butter and toss crubs in this to coat fairly evenly.
Sprinkle crumbs over the sauce.
Bake uncovered in a moderate oven (350F or 180C for 30 - 45 mins or until centre has heated and the topping golden brown.
