Tell me about Duck Fat

I'm in Oz, and I've been noticing supermarkets selling in lately.I've also seen roast potatoes cooked in duck fat in another supermarket.I went into the shops yesterday, and there's now heaps of containers of the stuff.

Is there something I don't know that everybody does, about duck fat!I want to get a container and cook something in it, but what!Anything that you'd normally use oil in!

Duck fat is really yummy.It is particularly good with potatoes, but try it with other things too and see what you think.

Roast vegetables in duck fat are the best.

Duck fat is brilliant. I'm cooking duck confit for Christmas dinner so i've got bought lots of it. Not so about the cholesterol; dietary cholesterol has very little effect on cholesterol in your body.

PPfft! Who really cares! It's Christmas afterall - it doesn't mean you're gonna eat it/use it everyday! Potatoes are just beautiful when roasted in Duck fat.

Countdown is now stocking it - or specialist stores like Nosh and Farro in Auckland. Some butchers might have it too. It's the most beautify, silken stuff.

My friend just tried it for the first time with roast potatoes and said they were very very nice.
Easy to get in Palmy but I see you are in Aussie.
Health food shops, deli, supermarkets (but you might have to ask).

Yummy stuff. When we were kids mum would save the fat when roasting duck (once a month). Great on whole roasted potatoes washed down with keffir.or just slap it on home baked fresh Russian potatoes style bread.
Look up eastern European recipes we use it a lot.
Steamed bread sliced with dripped duck fat and red cabbage .another favourite

I've tried it and goose fat.
To be honest, it didn't make any difference at all to plain old lard or dripping.

Can I roast unpeeled jersey Bennie potatoes! and I will be using duck fat. Last year the spuds were wonderful. Carole.

Great roasting potatoes in, and you can also slow cook the duck (usually legs) in fat, a method called confit (pronounced con-fee). Can be a little expensive given the quantities you may need.

going to try his cheese on toast flavoured ice cream once I can souce dry ice.
Purchase a sous vide so trying out his recipes.Eggs cooked so the yolk has just turn firm yet the white has not firmed up.
