Coconut Hatstacks

2 cups desiccated coconut
½ cup caster sugar
2 egg whites

Preheat oven to 180°C. Line a baking tray with baking paper. Place coconut, sugar and egg whites in a bowl, mix to combine. Place spoonfuls of mixture onto baking tray.
Bake for 10 minutes until golden. Cool on a tray or wire rack.
