Listening to Alison Leonard on the Breeze the other day, she was telling of a delicious watermelon/ feta cheese salad, is it mint sauce or Balsamic Vinegar that goes with it , can anyone help!

we had one I threw together last night - baby spinach to go further. So jucy no dressing needed - but mint in the salad too. Was YUMMY!

watermelon avacados mozzearella or bocconini,,,,torn into small chunks cherry tomatoes juice and zest of 2 limes salt and ground black pepper few torn basil leaves
cover and refridgerate 4 hours

Watermelon & Roasted Feta Salad (Greek)
100 ml ev oilive oil juice and zest of 1 lemon 1 bunch spring onions, finely sliced salt and pepper 250g feta in large pieces 1 tab brown sugar 1 med. watermelon in large chunks, deseeded ½ bunch mint, leaves only
Heat oven to 200C.
Make dressing from 75 ml oil, lemon juice, onions, salt & pepper.
Place feta on roasting tray, sprinkle with sugar, lemon zest and rest of oil, grind pepper over and roast 10 min.
Place watermelon in serving bowl, add feta and juices, dressing.Mix well, sprinkle with mint leaves.

mm yes, i was thinking along those lines Bexta021,for me a watermelon salad would be a "bit out of the square" so hope it goes well, as cooking for 36 people.Might try something like the Kumera Mint salad! i half heard that recipe as well - i must LISTEN!can anyone help me on that one.
