Hi. Wondering if anyone has any dairy-free dessert ideas! We've got an Xmas lunch at the weekend with family over from Aussie, who can't eat dairy & would love to do a nice dessert for them.Any ideas! TIA

Polenta & Seville Orange Cake (Spanish)
18cm tin
175g self-raising flour 1 tsp baking powder 50g coarse polenta 225g caster sugar 225ml mild olive oil 4 eggs juice and zest of 2 Seville oranges
Line tin.Heat oven to 170C.
Sift flour, bp, polenta and sugar, add remains in sieve and mix.Make a well in centre and pour in oil.Drop in eggs and mix with wooden spoon until no lumps.Add zest and juice (save a little juice to brush tin) to give dropping consistency – add water if nec.
Brush tin lining with juice, drop mixture into tin, smoothing into corners and flattening top.Bake 1 ¼ hrs (check after an hour) until well risen and firm.Rest 10 and turn out.

Greek Honey and Almond Cake
(serves at least a dozen)
Delicious served with peeled, sliced oranges.
350g (12oz) plain flour 2 tsp baking powder 1 tsp powdered cinnamon 350g (12oz) fine semolina 6 eggs, separated 100g (4oz) castor sugar 350g (12oz) mild olive oil 175g (6oz) good quality honey juice and grated rind of 3 oranges 1 tbsp flaked almonds
For the syrup: 175g (6oz) good quality honey 1 tbsp of orange-flower water (optional) 1-2 curls finely pared orange peel 1 small stick cinnamon
Heat the oven to 170°C/325°F/Gas Mark 3.
Sift the flour with the baking powder and cinnamon, mix in the semolina. Whisk the egg yolks with sugar until pale. Stir in oil and honey until blended. Fold in the flour alternately with the orange juice - the mixture should be soft but not too runny. Stir in the orange rind. Whisk egg whites until stiff and fold in.
Oil a baking tin (about 25cm x 30cm/10in x 12in) and pour in the mixture. Sprinkle with flaked almonds. Bake for 40-50 minutes, until well browned, firm and shrunk from the sides. Check after 30 minutes and cover with foil if the top looks like burning.
Meanwhile, make the syrup. Simmer the honey, a wineglass of water, the optional orange-flower water, the orange peel and the cinnamon for 3-4 minutes. Strain and pour over the cake when it comes out of the oven. Serve cut into neat little squares.

Flan de naranja (Spanish Orange Custard)
serves 4 - 6
6 egg yolks 150g sugar 360 ml fresh orange juice (about 3 large oranges)
Heat oven to 150 C.
Whisk yolks with sugar until thick and creamy.Gradually beat in juice.Pour into shallow mould or ramekins and place in a roasting tin.Pour in water to come halfway up sides of moulds.Place in centre of oven and bake 90 min.
Serve cold with fruit.
