Grease a 19x29cm lamington pan, line base and sides with paper, grease paper well. Melt choc in heatproof bowl over hot water. Spread over base of prepared pan; refrigerate till set. Combine coconut, sugar, cherries & egg white in bowl. Spread over chocolate ,rough top lightly with fork.
Bake in mod oven about 15 mins. Cool in pan. Cut when cold & store in refrigerator, will keep 4 weeks.
forgot to say beating the egg white first, then folding in the sugar, coconut and the cherries makes for a nicer topping

Cherry ripe slice
ok I haven't made it yet, but the picture looks lovely. 4x 55g cherry ripe bars, 100g unsalted butter, you could probably use normal,3 cups rice bubbles, 200g milk or dark chocolate chopped, 2tsp vegetable oil. Lightly grease a slice pan and then line it baking paper, combine cherry ripe and butter in a pot, stir over low heat for 4-5 mins until melted, remove from heat and stir in rice bubbles until combined, press into slice pan firmly then chill for 30mins. Melt chocolate and oil in a heatproof bowl over a saucpan of water until melted, then spread over slice. Chill for another 30mins. Using a hot knife and cut into squares, top each square with a small piece of cherry ripe.
