wyndra, the following recipe is from the former Trademe Cooks.

"Lemon Cordial
This lasts for ages once bottled and is lovely. You don't drink it as is, but use it as a lemon concentrate and water it down to taste. I usually quadruple the recipe below to make it worth the effort and end up with 4 - 6 bottles. The recipe below makes approx 1 litre. METHOD. Squeeze juice from 4 large lemons and put in to large saucepan. Add 4 cups white sugar, 2 cups water and 2 teaspoons citric acid. Bring to boil. Boil 10 mins. Set aside to cool. Stir in 1 teaspoon lemon essence. Pour into bottles with lids. posted by ppppaula"

I have just made 30 bottles of lemon cordial for fundraising. I used Stephanie Alexanders recipe and it is really nice. Just Google - it seems to be very popular!
