Or if you like it tangy, Dressing 2 tsp curry powder,cupolive oil ,2 tsp vinegar,tsp sugar, 1 crushed garlic clove, S/P, all in a jar shake to mix well. Servevegs hot or warm with the dressing mixed through well. This makes enough for large tray of vegs 1/2 quantities for smaller lots.

I sometimes stir a pesto-style mix through mine.There is a Mediterranean brand parmesan and roast capsicum dip that goes well with roast vegetables.
