why not preserve them in salt. Mine are just about ready, and look great.

I filled 3 jars that after two weeks, filled two. I did not add any water in the first place and did not have to when I did away with 1 jar.

I tried that and while they were great for savoury dishes, they weren't for anything else. I prefer now to juice some and freeze. I have also frozen the skins whole and zested.

Yes you can.
They take up a lot of space,
they are hard to zest after thawing,
they are hard to squeeze after thawing,
they are impossible to grate after thawing,
they are very easy to squeeze after thawing.

So you are better off thinking what you'd like to do with them later on and then grate, zest, squeeze, slice etc accordingly. Then freeze.

Yes, I freeze to use for lemon icing on Banana Cakes so don't have to worry re uli's posting.

I slice lemons and freeze the slices - pop them frozen into Gin & Tonic :-)

I freeze the juice and the zest separately.

I also freeze sliced limes for drinks as they have the annoying habit of not having any limes on the tree in the middle of summer when you want some LOL :)

I do the prep on them before freezing.
juice them, zest them, and freeze those too.

Uli suggests that just putting them in the freeze doesnt produce a great result (but I haven't tried it)

i do i cut them into wedges put on a try to free floe the but it in to a container for my coctails, G &T etc

I grate the zest and squeeze the juice for freezing -then boil what's left in the microwave to clean it -then put some of the boiled remains down the waste disposal to sanitise it.Waste not!
