180g butter / 3tbsp dark cocoa / 270g dark choc - chopped / 3 eggs / 3 egg yolks / half a cup sugar / 3 tbsp flour / 18-24 fresh or frozen raspberries or blueberries.Oven to 210 degrees. Butter inside of ramekins, lightly coat with cocoa, set on an oven tray.Melt butter, add chopped choc, stir for 30 seconds. Remove from heat while choc finishes melting. Place eggs egg yolks and sugar in mixer a& beat on high speed until thickened, pale & ribbony (about 5 mins).Whisk choc and butter until smooth, quickly fold into egg mixture along with flour. Spoon into prepared ramekins, drop 3-4 berries on top and press gently into the mix. If using frozen berries, leave on the bench for 10 minutes before cooking. Bake until sides are firm, but centres are soft (12 mins) to test for doneness, insert skewer into centre, the bottom half should be covered in liquid mix. Remove from oven and from hot baking tray & allow to cool for 3 minutes - don't be tempted to leave longer as they will continue to cook. Either serve in ramekins or carefully flip, allow to stand for 10 seconds then lift off the ramekin. Dust with cocoa and serve.
