There are zillions on line but would really appreciate the link to your favourite - have some kifler potatoes which are recommended for this dish so wanted to do something really nice for a pot luck dinner- cheers

Make a dressing with three parts top quality extra virgin olive oil, one part red or white wine vinegar, chopped gherkins, chopped pickled onions and capers, salt, pepper, chopped parsley, chopped tarragon if available.Dress the potatoes while hot and serve hot, warm or cool.If you need something more substantial add a few coarsely chopped hard boiled eggs.

i use hummus, sunflower, pumpkin etc seeds spring onions, left over roast carrots capiscum basically anything but any of the various hummus's as the base

All of the above help to make a delicious and moreish potato salad. In addition to some of the ingredients mentioned above, I also like to add chopped gherkins, chopped mint, cooked bacon, and a sprinkling of carraway seeds.these make a great potato salad into a sensational one! (IMO) Also, the secret to making a really flavoursome potato salad is to dress the potatoes while they are still really warm.
