Alison Holst's HAWAIIAN HAM MUFFINS
2 cups standard plain flour
4 tsp baking powder
½ tsp salt
about 100g ham or ham pieces, diced
1½ cups grated tasty cheese
2 spring onions, chopped
300g can crushed pineapple
about ¾ cup coconut creamormilk
1 large egg

Measure the dry ingredients into a large bowl.Add the diced ham and grated cheese.Chop and add the green leaves as well as the white part of the spring onions, and toss everything together until evenly combined, using a fork.
Drain the pineapple, reserving the juice.
Make the juice up to 1 cup with coconut cream or milk.Put the crushed pineapple, liquid and egg in a smaller bowl and mix until well combined, again using the fork.
Pour the liquid into the flour mixture, and fold together until the flour is moistened, taking care to avoid over-mixing.
Spoon the mixture into 12 medium or 24 mini-muffin pans which have been sprayed or lightly buttered.Top with a little extra grated cheese if you like.
Bake at210°Cfor12-15 minutes, or until tops and sides are brown, and the centres spring back when lightly pressed.:-))
