Lemon recipes anyone?

I've been given so many lemons and need some ideas to use them up.
Normally make neenish tarts but very time consuming.

Homemade lemonade is very nice. It needs lots of sugar as it is basically a syrup that you dilute like Ribena.

You can zest them and also juce them and place in the freezer for later use :) Thats what we did atthe old cafe I worked in

You can also freeze the lemon honey and use it straight from the freezer - delicious with yoghurt or ice cream

Lemon muffins are yummy.If you have that many lemons I would juice them and freeze them.

Tangy Lemon Slice
200g butter¼ cup golden syrup
½ cup sultanas1¼ cups flour
1t baking powder1 cup coconut
½ cup sugar1¼ cup crushed cornflakes
Melt butter and golden syrup in a large saucepan.Remove from heat.Sift in flour and baking powder.
Add sultanas, coconut, sugar and cornflakes.Mix well.
Press mixture into a greased 20 x 30cm sponge roll tin.
Bake at 180°C for 20 minutes.
When cold, cover with lemon icing and cut into squares.

Lemon Icing
2 cups icing sugar2t grated lemon rind
1t butterApprox 2T lemon juice
