Bought a leg of lamb

It is far too big for us, but, it was on special.Just wondering if anyone has any good leftover lamb recipes/ideas.thanks

I bought a leg of lamb from Pak n Save yesterday on special, $18, so had roast lamb with all the trimmings last night, cold meat with salad, beetroot and potatoes tonight and sandwiches tomorrow, and if any left, lunch again the day after (only two of us).

Mince it for shepherd's pie.
Lamb korma (google, heaps of recipes on internet for it).
Basic lamb curry.
Slice into gravy and reheat in oven, with roast mixed veg.

Lamb goes extremely well with couscous.

cold lamb goes really well with salt sprinkled in it - lamb and mint sauce sandwiches on really fresh bread

It will keep quite well in the fridge for days covered in gladwrap.

Fry onions and garlic in a pan, add a tin of tomatoes, sliced olives and chunks of leftover lamb and throw in leftover rice - and voila! Instant yum! You could also chuck a bunch of veges in and make a stirfry, of course.

Eat it sliced, cold or reheated, til you can no longer get decent slices off it, then chop or mince the remainder and use it in shepherds pie, fritters, rissoles or whatever. It will freeze well as slices, particularly if you pack it with some gravy and reheat it and serve with freshly cooked veges. Or you could plate up some of the leftovers with veges and have freezer meals all ready to reheat on a day when you don't want to cook.
