What's your favourite dutch oven recipe?

Just bought one (not Le Creuset - sob!) but as it's guaranteed for 5 years it can't be too bad. I want to make something nice to christen it. I was just looking at a nice juicy free range chicken in the fridge but was also curious aboutyour tried and true recipes.

Here are two very easy but delicious ways to cook chicken. Free range chicken will make it even more special.

Chicken with Tomatoes & Honey

1 large chicken quartered
2 tab oil
1 large onion grated
1 kg tomatoes peeled and chopped
½ tsp ground ginger
1 tsp cinnamon
½ tsp saffron crushed
2 tab honey
50g blanched almonds coarsely chopped
1 tab sesame seeds
salt & pepper
1 tab oil

Put all ingredients except honey, almonds & sesame into large pot, cover and cook about 60 min until very tender.
Remove chicken, reduce sauce until thick. Add honey, return chicken.
Fry almonds in oil, add sesame, cook until lightly coloured. Sprinkle over chicken.

Chicken with Pickled Lemons and Olives

1 large chicken quartered
3 tab olive oil
1 large onion grated
3 cloves garlic crushed
¼ tsp saffron crushed
¾ tsp ground ginger
1 ½ tsp cinnamon
1 ½ large pickled lemons rinsed and cut into thin strips
15 green or violet olives soaked in water 30 min and drained

In large pan put all ingredients except olives & lemons. Half cover with water, bring to boil, simmer about 45 min, adding lemon & olives after 30 min,
until very tender. Turn and check water periodically.

I did cook the most fabulous, juicy, tasty chicken tonight, with crispy potatoes - just divine. Quite a different way of cooking for me and it worked really well. DH has decided to keep me on for a bit longer.

I'm trying to find different recipes, to try and broaden our palettes. some work, some not so much lol
