I want something that Is extra special.
Maybe a choc mud or something
Any ideas or recipe suggestions!

There is lots of lemons about at the moment so how about a lemon yoghurt cupcake.

A real nice choc mud one as you noted but place one or two pieces of those Caramello squares from a choc bar in the middle of each, be a nice surprise topped with say a nice choc ganached with a piece of same again on top. Those wee choc eggs would be ideal for this.

Another idea, only half fill the cups with a nice butterscotch cake mixture, baked a little to form a light crust on top then top with a wee bit of caramel sauce then topped with a meringue layer before being fully baked then with grated choc or crumbed hokey pokey sprinkled over.

I'm not happy with the choc mud recipe i have i was looking on here for another however I can't find the campmum one everyone mentions.

My Very Easy Choc Mudcake
250g butter, 1&1/2 cups hot water, 2 cups sugar, 1 tbsp instant coffee, 200g dark cooking chocolate, 1/4 cup cocoa, 1&1/2 cup self-raising flour, 2 eggs, 1 tsp vanilla ess. Melt butter in pot, stir in hot water, coffee, sugar & chocolate. Stir until smooth. When cool, beat in eggs & ess. Add dry ingredients . Mix well. Pour into baking paper lined tin. Bake 180*C for 1 hr. Don't overcook! Ganache Icing: 125g dark chocolate, 1/2 cup cream. Warm together, mix until smooth. Leave until spreadable consistency. Spread on cold cake or serve warm as a sauce. YUMMY! I have doubled recipe in the past successfully. Made a large roasting dish size. Cook on lower temp for 1/2 hr longer. posted by campmum
