Venision entree recipes plse.easy to make

was thinking of making small venision pies for entree but dont have clue how to make.Never cooked venision b4.I have venision medallions to use.Any ideas or other recipes would be appreciated,,,cheers Carol

Hi, have used venison quite a lot. For the pies I would usually use a tougher cut but you still could use the medallions. How I would go about making the pie filling would be, (not giving exact quantities as unsure how much you are wishing to make.
Dice venison
Seal off venison in a hot pan
Sweat off onion and garlic
add the venison to your onion and garlic deglaze the pan you have sealed the venison off with red wine.
Add some beef stock or even water would do the job. Add any vegetable you may like (mushroom, even potato, kumara).
Herbs such as thyme, oregano would also go nicely.
You can also add tomato paste to enrichen it slightly.
Slow cook.
Thicken with cornflour and red wine mix.
Cool completely before using as a pie filling.
So basically treat it as you would if you were making a beef stew.
Have made venison pithiviers in the past (A type of pie) and along with the venison mix had incorporated blue cheese into the pie.

P.S a good pie dough to use is a hot water pastry which is just Water, lard and flour along with salt.
Just like a pork pie pastry.
