Help non-cook question Lamb roast & garlic cloves

The cook of family has gone out for day and left me with written instructions to cook lamb roast, which I didn’t read until after they left.
Theywant me to take roast out of fridge put on bench 3 hrs before it goes in oven. It wasn’t frozen why 3 hrs!, surely they’ve written it wrong.

Next as they were leaving I showed them a magazine recipe also for above “that sounds good do that”. Alas now they’ve gone and I’ve read it properly am stuck. It says 8 cloves of garlic and gives a variety of herbs.
Tells you to sprinkle the herbs but it doesn’t say what to do with the garlic.

Ive googled and there’s various things about crushing or slicing the garlic. Some say rub on top others put slits all over over meat and push slices in. They all sound like too much work, can I just throw them in pan as they are!

Taking meat out of fridge brings it to room temp before cooking makes for nice even cooking through out the roast, and tender meat. re your garlic my choices would be 1. Rub some chopped garlic i tablespoon oiloverall the meat sprinkle with s/p before putting it in the oven, 2 peel garlic cloves cut a slit here and there in the meat pop a clove in before cooking to flavour. Sprinkle herbs over both. If u don't want to do the garlic thing just throw a WHOLE clove in the pan with the skin on when eating squeeze garlic out, beautiful like honey.Either of First 2 ideas are good as they flavour ur meat beautiful, hope you enjoy your roast.

Thanks, I knewabout the room temp but have never done 3hrs, suppose it works on the size (kg). My usual is chops 1/2 hr. LOL
How deep would slit be! How many do you think would be enough!

Alright for starters beef is NOT heltahy. You shouldn't eat it often maybe once or twice a month, the farther you can stay away from it the better. I generally eat chicken and turkey. I've never eaten lamb so I'm not sure. About meat and iron, you can get higher quantities of iron from spinach than from meat. Some reasons why you shouldn't eat mean : its linked to colon cancer, increases blood pressure, sucks calcium out of your bones.References :
