It will keep in the fridge for several weeks. in a plastic bag.For longer storage freeze it in usefully sized pieces.

Not exactly freezing .but I often keep mine in a screw top jar full of white wine, in the fridge, works well.

I now freeze surplus ginger for later use but a good number of years ago I successfully stored the surplus ginger in a jar with sherry, refrigerated of course.The ginger and the gingery sherry were then used for stir-fries.:-))

I freeze it. When needed I take out and with a sharp knife (fast over a skinned bit) , run it down the frozen ginger straight into the dish. No need to chop or grate!

I freeze it then grate it from frozen into whatever dish I want it for.

Yes, I do this too.

You don't need to defrost it, just grate as much as you need and then put it back in the freezer.I don't bother with peeling for this method.
