i am looking for a moist banana cake recipe pls one i can make in the roasting dish.Thanking you. maureen.

moetus/Maureen, here's a recipe from the former Trademe Cooks - thanks to partybagsnz.

"Family-sized Banana or Chocolate Cake
250g butter, melted
2½ cups caster sugar
2 large eggs
2 tbsp golden syrup
4 cups self-raising flour
3 tbsp baking cocoa for chocolate cakeor
2 very ripe large bananas, mashed for banana cake
2 tsp baking soda
2½ cups lukewarm milk

Cream the butter and caster sugar.Add the eggs and golden syrup - if making banana cake, add the bananas and mix well.
Sift the flour and baking powder (and cocoa if baking a chocolate cake).
Dissolve the baking soda in the milk.Blend the dry ingredients and milk into the butter mixture and mix until well combined and the mixture is lump free.Pour the mixture into a greaseproof paper-lined very large cake tin (equivalent to an oven roasting dish).
Bake at180°Cfor45-50 minutes, or until the cake comes away from the paper.Wait for 10 minutes before turning the cake on to a rack.
When cold, ice with chocolate icing, sprinkle with coconut and serve."

Unusual having Golden Syrup in a Banana Cake, must give it a try.

Put 4-5 bananas in food processor and mix.
Add 2C Sugar, 1C Oil, 4 Eggs. Whiz til blended well.
Then add 2C Self Raising Flour, 1t Baking Soda, 1t Salt.
Whiz togther til really well mixed.
Pour into a roasting dish
Bake 150 degrees celcius for 1hour 20 minutes. depending on ur oven

I hope your bakmdraeer has a sweet bread button, or just use the reg cycle.Caribbean Banana BreadLarge Loaf1/3 C water3/4 C mashed very ripe banana2 T vegetable oil, margarine or butter (I use olive oil)1 large egg3/4 t salt3 T brown sugar, packed1 1/2 C white flour*1 1/2 C whole-wheat flour1 t ground nutmeg or cinnamon (bet pumpkin pie spice would be good)1 1/4 t bread-machine or instant yeast1/4 C each raisins and chopped pecans (optional) * In Canada use all-purpose or bread flour; in the United States use bread flour.(You don't have to use wheat flour. Just add the amt listed in white)Extra Large Loaf1/3 C water1 C mashed very ripe banana (about 2 medium bananas)3 T vegetable oil, margarine or butter (I use olive oil)2 large eggs1 t salt1/4 C brown sugar, packed2 C white flour*2 C whole-wheat flour1 1/4 t ground nutmeg or cinnamon (bet pumpkin pie spice would be good)1 1/2 t bread-machine or instant yeast1/3 C each raisins and chopped pecans (optional)*In Canada use all-purpose or bread flour; in the United States use bread flour. 1. Banana bread is made in a loaf and usually is more moist than bannaa cake which has the consistancy of a fluffier lighter texture than the bread. The bread is easier to cut because the texture helps it stay together because it has more oil in it than the cake while the cake is the consistancy of any other kind of cake.
