Cooking poultry.

Why is it, that we all gag at the thought of eating rare chicken meat, but we insist that duck, quail, and other game birds are eaten rare! Doesn't it strike you as strange! It does me - I would have thought that duck, at least, has the potential to contain the same toxic "bugs", or worse!
