Queen cake

I would like a royal -Queen cake/ cakesor the likes to take to work tomorrow Any ideas

QUEEN CAKES

125g butter
1t vanilla essence
1/2 cup caster sugar
2 eggs
1/4 cup milk
1 cup flour
2t baking powder
1/2 cup sultanas

Method
Preheat oven to 190 C.
Cream butter,vanilla and sugar and beat until light and fluffy.
Add eggs one at a time and beat well after each addition.
Pour in milk and mix.
Sift flour and baking powder together and add sultanas.
Fold dry ingredients
into creamed ingredients.
Spoon into patty tins which have been lightly
sprayed.
Bake for 15 minutes or when the cakes spring back when lightly
touched.
Transfer to a cooling rack.

English 'Queen Cakes' were dainty afternoon tea cakes that were the forerunner of today's cupcakes, except that they were smaller and not iced.'Patty tins' were shallower than muffin tins, but you could bake them in a muffin tin without putting too much mixture in each.

Thank goodness for dear old Aunt Daisy ! A quick look through my collection has shown that there are actually very few recipes with any royal connection but I found this in one of Mum's Aunty Daisy books.

Royal Sponge

1 teacup castor sugar
3 T top milk or cream
1 T softened butter
3 eggs
Pinch of salt
Beat these together for 15 mins ( or in todays terms beat with an electric mixer until very light and thick ) then add:

1 breakfast cup arrowroot ( cornflour) and 1 heaped T baking powder
and beat for another 3 mins.

Bake at about 180C in two greased and floured pans for 12 to 15 mins.

For filling spread a thin layer of lemon honey on one side of each cake then scatter over a layer of finely chopped or ground walnuts. Put the halves together with whipped cream and dust with icing sugar.

Queen Elizabeth Cake
INGREDIENTS
• 1 cup boiling water
• 1 cup dates, pitted and chopped
• 1/4 cup butter, softened
• 1 cup white sugar
• 1 egg
• 1 teaspoon vanilla extract
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 cup chopped walnuts
• 1 cup flaked coconut
• 2/3 cup packed brown sugar
• 6 tablespoons butter
• 1/4 cup cream
DIRECTIONS
1. Pour boiling water over dates in a small bowl, and let stand until cool.
2. Measure flour, baking powder, soda, salt, and nuts into a small bowl. Stir to mix.
3. Cream 1/4 cup butter or margarine and white sugar together in a mixing bowl; beat in egg and vanilla. Add flour mixture to creamed mixture in three parts alternately with date mixture in two parts, beginning and ending with dry mixture. Spread batter into a greased 9 x 13 inch pan.
4. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until an inserted wooden pick comes out clean.
5. To Make Topping: Mix coconut, brown sugar, 6 tablespoons butter and cream in a small saucepan over medium heat. Boil for three minutes. Spread over warm cake, and brown under broiler.
