purchase this from a few different supermarkets, as hubby loves it, and always.always.the potato is hard. and last lot, only found about 8th of an egg. why is this.anyone work in delis. do they buy it in bulk,or cook it on premises. (to add, do make my own if i want a large lot)

Don't know about the one that you brought but I have found in the past that the egg has got so mashed up that it almost blends with the mayo and makes it appear like there's not much egg
