Bacon bones.soup.?

I have a lovely meaty bacon hock - do I remove the skin off it before using to make soup or do you leave this on, then skim fat etc off at the end!Thanks anyone.

make the soup with the entire thing skin and all, after meat falls of bone remove skin and bone, leave meat but i shred meat to smaller size. and ive neva had to skim of any fat.
