once you have opened a jar of it can the balance be frozen into small amounts, I find I waste it once it is opened as there are only 2 in the family and I only want it for Parma chicken

Use fresh chicken and you can freeze everything.

Yes I have frozen all sorts of sauces.The beauty is that they thaw really fast, as they are usually in small quantities. I use glad storage tubs for larger quantities, but have used zip or snap lock styled plastic bags or small plastic takeaway style containers for smaller amounts.Sometimes if I only have a couple of tablespoons even used iceblock trays. The secret is to extract as much air as possible.Hope this helps.
