FILO APPLE ROLL

Grate 2 crisp apples (with skin on optional), add juice and rind of 1/2 lemon, 1 tsp honey, 1 tsp cinnamon, and 2 Tablespoons sultanas.

Spread out 4 to 6 rectangles of filo pastry, brushing in bewtween layers with a little melted butter (or spray lightly with rice bran oil).Place apple mix on long side of filo and roll into a parcel, turning over the short ends as you go.

Bake at 200*C for about 12-15 minutes.Cover loosely with a sheet of foil in the last five minutes to stop burning the top.

Sprinkle with icing sugar and serve with whipped cream or vanilla icecream.

Fruit Sponge Pudding - a lovely old recipe.

Place COLD cooked fruit of your choice in the bottom of a greased oven-proof dish. the following work well. Stewed apple, stewed apple with rhubarb, rhubarb, stewed apple with any berries, peaches, pears, pineapple, etc.etc.

For sponge topping:
Mix together:100gms soft butter and 3/4 cup sugar
Add and mix in 2 eggs
Add 1/2 cup milk and stir through
Sieve and add 1 cup flour and 2 (two) tsps baking powder
Add extra milk if needed to make a thick batter.

Pour over fruit.
Bake at 180°C for 30-40 minutes until the batter is cooked through - check with a skewer or knife. Serve and enjoy. :-)


Variations:

Coconut:
Add and mix in 1/2 cup coconut with flour mix.

Chocolate:
Add and mix in 1 tablespoon cocoa with dry ingredients. Add half a cup of coconut too if you want.

Caramel:
Use brown sugar instead of the white sugar. Add 1 tsp vanilla.

Ginger and/or Spice
Add 1 to 2 tsps of ground ginger and/or 1 to 2 tsps cinnamon and/or mixed spice.

APPLE PIE
Pastry
1c plain flour
1/2 c self-raising flour
1/4c cornflour
1/4c custard powder
1 tbsp castor sugar
125g butter chopped
1 egg separated
1/4c water, approximately
1 tbsp extra castor sugar

Apple filling
7 large apples
1/2c water
2 tbsp sugar
1/4 tsp cinnamon
1 tsp grated lemon rind

Combine sifted flours, custard powder and sugar in large bowl. Rub in chopped butter with fingertips or process in food processor until just combined. Add enough combined egg yolk and water to mix to a firm dough. Turn onto lightly floured surface, knead gently until smooth. Cut dough in half wrap in plastic wrap and refrigerate 30 mins.
Roll out half the pastry between two sheets of plastic wrap until large enough to line 23cm pie dish.
Spoon cold filling into pastry case. Brush edge of pastry with lightly beaten egg white.
Roll out remaining pastry and cover. Press down edges with fingers. Brush with egg white. Sprinkle pie with remaining sugar. Bake in mod hot oven 20 mins then reduce heat to moderate bake for further 20 mins.
Filling
Peel apples and cut into quarters. Place apples in a large pot with water, bring to the boil, reduce heat cover cook for about 5 mins or until just tender. Transfer apples to a bowl and add remaining ingreds. Cool to room temp.
