can I use dried pasta sheets! Will this differ the cooking time or the liquid content etc! thanks

It won't change the cooking time but you'll need a lot more liquid for the instant pasta sheets.

Most likely were fresh once, before they were dried, which is why they need re-hydrating with the extra liquid.
