Just got back from Vanuatu yesterday and while we were there had a wonderful curried cucumber salad - I can't find a recipe for anything close to it anywhere.Any ideas what they would have put in the dressing - it was opaque, slightly creamy/yellow (presumably from the curry flavouring) and quite thin so I'm thinking possibly coconut milk or cream with lime juice and curry powder as the flavour was very subtle.

I'm sure if you make your own "curried cucumber salad" that nobody will argue that your recipe is incorrect LOL
