Tried & true Corn & Bacon fritter recipe please!

A few of the last ones I have tried are not very delicious, nice but not super yummo. I would love a yummy tried and true recipe :)

Use only enough flour to hold the batter together, make sure that you season the mixture well with salt and pepper, fry in lots of butter or olive oil.

I like to add a few chopped chives, dash of cayenne and a touch of grated cheese.

Separate the eggs and whisk the whites until stiiff,fold in gently.The fritters are always light,never stodgy using this method.

Just don't try one with mint!They looked beautiful but I wondered how the mint would go - the recipe had a few raves so I thought 'what the heck'.Never again.Mint does not go with corn fritters.

I prefer just plain corn but served with crispy grilled bacon.Love the separated eggs idea - will try that next time.
