Spiced fruit loaf

1 cp sugar
50g butter
1 cp sultanas
1 cp dates
1 tbsp golden syrup
1. 1/2 cps water
1 tsp mixed spice
i tsp ground ginger
1/2cp walnuts,chopped
1/2tsp vanilla
1/4tsp salt
2 cps flour
1 tsp baking soda
1 tsp baking powder

Place sugar,butter,sultanas,dates,go-
ldensyrup,and water in a large pot.Bring to boil and simmer 5mins
remove from heat and leave to cool for 10 minutes
Stirmixed spice ginger walnuts, vanilla and salt into date mixture
Add flour baking soda and baking powderint date mix to combine
pour int loaf tin and bake 1hr or till skewer comes out clean
Leave to cool in tin for 15mins before turning out onto wire rack

this is better keeped a couple of days and I have made it with apricots and ginger as well and double the recipe

The temp should stay the same. But check the rolls after about 20 mnuties (it depends on the size of them of course). Check that the bottoms are nicely browned and they feel light (not heavy, like they did when they were dough this is because most of the moisture will have baked out of them). They should be done 5 to 10 mnuties sooner than an entire loaf would be.cheers
