Frozen Tomatoes - Soup Recipe

Hi,
Last year we free flow freezed tomatoes, a considerable amount - cut in half or quarters. We are interested to know of a good tomato soup recipe for these.

Put in water and boil with sweet basil and onion when cooked mulie "sp" and chuck out skin left over. make up a rue "sp" to thicken and add slowly to tomato, serve with grated cheese

My mother in law's recipe, it's absolutely beautiful!
Tomato Soup

14lb tomatos7 onions 2c sugar 7 bay leaves1tsp pepper
14 sprigs parsley ½lb butter 1oz celery seed8Tbsp flour
2Tbsp salt

Tie spices in a muslin bag. Boil all except the flour and butter till soft.
Remove spice bag and either puree in a blender/food processor or rub through a sieve.
Melt butter and add flour and mix until smooth. Add to puree and slowly boil for 5minutes. And finally bottle
When using, add an equal amount of water, stock or milk.

I have made dollakernz's above recipe from one of the Homegrown series- it is a very good recipe. I did not add the thickening- have frozen it in blocks and have been making a thick white sauce and adding the defrosted soup to it- it has become a family favourite.
