Did you see hottest home baker last night. I was impressed with Hamishs cloud cake.
Used the recipe off the website this morning.
WELL I have a beautifully clean oven. Because the recipe called for a 20 cm cake tin. The mixture didn't fit into the tin. I filledthe tin, not to the top, but, thought, no baking powder or soda, so it won't rise much
And used the rest of the Mixture in muffin tins.
ANYWAY, the recipe rises enormously, before sinking again. It over flowed into the oven.
MY ADVISE, ignore the recipe, and choose a larger tin. Because the cake is DELICIOUS

It's a Nigella recipe I think from one of her earlier books. She also calls it Cloud cake.

I can't do cut and paste on this computer. It is on the TV3 website
METHOD 1. Preheat the oven to 180°C. Grease a 20cm spring form cake tin. 2. Melt the chocolate – let butter melt in it. 3. Beat the 2 whole eggs and 4 yolks with 75g caster sugar. Gently add the chocolate. 4. In another bowl: Beat 4 egg whites until foamy, add the remaining caster sugar. 5. Lighten chocolate mixture by mixing in a spoonful of the egg whites, then fold the rest in. 6. Bake for 35-40 minutes. 7. Cool in its tin.
