Apples will keep for months if done properly.I think you need a cool, place with good airflow.I'm no expert, but I'm sure there are experts reading this

preserve some, then you have pie filling
apple cakes are yum! grate into mince when your making pies or burgers makes them lovely and soft you could try slicing and drying them/ then they are great to snack on and also for putting in your museli apple sauces and chutney
failing that take to sell at your local market or trade with a neighbor who has something else or be generous and give away some
