I want to make a finger food thing for a friend's birthday and want to do spinach and ricotta in filo parcels.I only have frozen spinach and all my hunting for recipes here or elsewhere just says 'spinach'.Can I use frozen if I squeeze out all the moisture!Also, what other flavour would go well with spinach and ricotta to make it a bit tastier!Thanks.

I add a little blue cheese to mine.
