Discovered coconut pancakes in rarotonga in January - I gather they have fresh ground coconut and fresh coconut milk in them - served with maple syrup and bacon just fabulous. Does anyone have a recipe please!

Personally,I would replace the milk in pancakes with coconut milk,bake some coconut and put over the top with the bacon and maple syrup. Sounds good to me

Hmmmm pancakes are lovey fried with the bacon. Yummmmmmmmmmmmmmmmm.
