Ive made fritter batter with the bacon, corn etc, will the mixture be ok the next day? I would rather cook them fresh again tomorrow than re-heat cooked ones... . .

When I prepare fritter batters early I leave the baking powder out & add it just prior to cooking the fritters & that seems to work well. I think if you have already added the baking powder to the mixture you may need to add extra tomorrow just before cooking them or they could be a little flat and doughy.
