Bok choy.....

Does anyone have any yummy recipes using bok choy, have just brought some (as it was cheap) and dont have a clue what to do with it haha. Thanks

Pak Choy is used in stir fries etc

Bok Choy is often made into Kim Chee or served with meat.

Which one have you got?

I think the terms bok choy, pak choy and pak choi are used interchangeably at most super-markets for the one with the wide white stem and dark green leaves- at least this is the case at the supermarkets in my areas.

I slice boy choy and use it in stir fries and in noodle soups- delish with ginger and garlic

My mum likes to wash and chop it up, put it on a saucepan with some water, lid on, steam it, season it with some avocado oil and salt, then dish up and serve.

Really yummy, and out family tends to eat lighter flavouring so it's not bland or plain for us.

Fry it in a little oil with oyster sauce and garlic and/or ginger.

Add it to spicy korean noodles mmm!

You can do anything with it - don't feel limited to asian dishes - it's a green vegetable, so use it as you would any other green vegetable if you want to. You're only limited by your imagination!

I am sure you are right - I buy mine from the markets - if I haven't got any myself - and of course the Asian people growing and selling the stuff are more particular with names.

Thai Prawns with Pak Choi

2-3 heads of pak choi
2 tbsps vegetable oil
2 cloves garlic, peeled & thinly sliced
1 stalk lemon grass, cut in half & bruised
2 kaffir lime leaves, torn in small pieces
1 small onion, peeled and thinly sliced
1 hot red chilli, thinly sliced
1 teasp fresh ginger, peeled & finely shredded
1 tbsp coriander seeds, crushed
500g large raw prawns, peeled
150g snow peas, trimmed and halved
2 tbsps thai fish sauce
juice of 1 lime

Wash and cut the pak choy into bite sized pieces.

Heat the oil in a wok. Add the garlic, lemon grass, lime leaves, onion, chilli, ginger and coriander and quickly stir fry (not more than two minutes).

Add the prawns, peas and pak choi and stir fry for another 2-3 minutes until the vegetables are cooked but still crisp and the prawns are pink and opaque.

Add the fish sauce and lime juice.

Discard the lemon grass.
Serve immediately with rice or noodles.
