Plum Cake

125g butter softened
¾ cup caster sugar
2 eggs lightly beaten
1 cup self-raising flour
½ cup plain flour
½ cup milk
8 - 10black plums, stoned and halved
icing sugar to dust.

Preheat the oven to 180c. Grease and flour a 23cm ring tin or kugelhopf tin, shaking out any excess flour.

Cream butter & sugar then add the beaten eggs, beating in gradually.

Fold in the sifted flours alternating with the milk. Gently fold in the plums.

Carefully spoon the mixture into the prepared tin and smooth the surface ( do not push the mixture down ).

Bake for 50 minutes or until a skewer comes out clean but be wary that plum will be moist. Leave to cool in the tin for 10 minutes before turning out onto a wire rack. Dust with icing sugar before serving.

This cake is best eaten within 24-36 hours.

1 T butter, room temperature
Instructions
Preheat oven 190 deg
grease and flour largish baking dish
In large mixing bowl, stir together first 7 ingredients- mix till lumpy.
arrange plum slices on top of batter.
in sm bowl, stir together flour, butter, sugar and sprinkle topping over plums.
bake 20-30 mins till toothpick in centre comes out clean.
cool for 15 mins; sprinkle with icing sugar and serve.
( If I am in a hurry I just pat the dough out on a baking tray and it comes out rustic looking and goes a long way for a crowd)
