Jalapenos. Can they be used in cooking

Jalapenos are medium heat, milder than serranos but hotter than Poblanos.They don't get any hotter when they are cooked, so if you tolerate them in salads you will tolerate them cooked.

That's not exactly right.It's the placenta (the membrane that connects the seeds to the flesh) that has the greatest concentration of heat.When you remove the seeds you generally remove a fair bit of the placenta as well and this is why many people think it's the seeds that are hot.

They also dehydrate nicely to keep all year around.That way greedy husband can't eat a pile fresh like he did one year.

You are correct (and I did know that but didn't want to compicate things!)

What is considered the usual effect in removing the seeds to reduce the heat is that you squeeze the placenta and the capsaicin ( the hot bit) is transferred to the flesh of the chilli anyway. ( US--chile) .
The seed are often removed because they can sometimes impart a bitterness to a dish ifbroken up and blended or look avisual distraction in some US style dips etc.
