Beat together egg, sugar, oil and buttermilk. Combine dry ingredients. Add zucchini and wet ingredients to dry ingredients. Mix until all ingredients are just combined, and spoon into prepared muffin tins. Bake in a preheated oven at 180*C for 20-30 minutes.
ZUCCHINI NUT MUFFINS 3 cups flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1 tsp cinnamon 2 cups sugar 4 eggs, room temperature 1 cup canola oil 2 cups grated zucchini 1/2 tsp vanilla essence 1 cup chopped walnuts 1/2 cup raisins
Preheat oven to 180*C. Grease muffin pans. Sift dry ingredients (except sugar) and set aside. Combine sugar and eggs. Beat 2 minutes. Add oil and beat for 3 minutes. Add zucchini, vanilla, nuts and raisins. Fold in dry ingredients until mixed. Fill muffin pans two-thirds full and bake for 25 minutes . Wonderful with berry jam.

i just add some to savoury muffins, , , Or to a Quiche". . another way is to slice and out into a potwith some butter and tomatos and cook til tender. . u can add a little chopped onion if u want... and seasoning to taste. . it yummy and my daugthers favouritezucchini dish. .

This is a quiche recipe but very popular baked as muffins 2 medium Zucchini grated 1 large onion finely chopped 2 rashers bacon chopped 1 cup grated cheese 1 cup S/R flour 4 eggs beaten ! /2. cup oil Combine ingredients put into greased dish or muffin trays. bake Moderate oven 20/30 minutes other veg grated or chopped can be added also 1 tsp curry powder.
