Just wondering if I can use already cooked, peeled prawns on the BBQ as a kebab! Or will they dry out too much! Any suggestions for a nice sauce, nothing too Chilli

Cooked prawns will be dry to start with and won't improve when cooked again.
A sauce that we like with prawns is this Vietnamese one:
Nuoc Cham:
2 tab fish sauce 2 tab fresh lime juice 1 tsp palm sugar (or more to taste) 1finely chopped hot chilli 2 cloves garlic
Pound all together (or whizz in a mini-processor) .

I wouldn't . Just keep them on ice and add a nice dipping sauce
