Yup. Had disasters too.
Mark out the circle you are going to fill. If they are too big they stick or collapse or just look naff.
Follow the recipe to the letter!
Make sure the skin is well formed before cooking.
Watch them as much as poss while cooking. They sometimes spread. They sometimes do nothing.
Don't open oven! Until end that is

Oh and another tip I was told. Don't make them on a wet day. Dry days are best to form the skin. So if you're in Auckland, today is a no go. Apparently.
