Seeing as there is so much baileys-flavoured stuff around today - does anyone have a easy, close to no-fail (I am the idiot that fails at idiot-proof) recipe for Baileys fudge! thanks in advance

Baileys & White Chocolate Fudge:

150ml Baileys
50ml Milk
30gm Butter
350gm Castor Sugar
300gm White Chocolate
Butter for greasing tin

Grease tin, chop up chocolate into small pieces.

Measure out 125ml Baileys, place in saucepan, add milk, butter and sugar, put over low heat, stir occasionally until sugar disssolved and butter melted.Turn heat to medium and let mixture gently simmer, stirring constantly.Leave mixture to bubble slightly for 10 minutes, remove from heat, add white chocolate and last of Baileys.Keep stirring until chocolate has melted and you have a smooth consistency.Transfer to the greased tin and chill in fridge for at least two hours or until set.Remove from fridge, cut into pieces and serve.
