But I would weigh the sugar, rather than in a cup.
Reason: because the grains of sugar are smaller, then you can fit more sugar into the cup (because of less air) - weighing it will solve this problem

No need to weigh it - the bulk density is about the same for 1A (normal stuff you get in the paper bags) and castor grades. It only becomes a consideration when you're into the extra fine castor.

No, it makes no difference, in fact, I prefer it as it dissolves far more quickly. I use caster sugar when making my jams too and it gives a much clearer jam because the sugar dissolves quickly. I very rarely use ordinary sugar in my baking etc.
