when butter is made, as it is whipped, there is a watery type of residue that comes from the whey - this is buttermilk. It does make baked goods very light- great for scones and pancakes etc. As for an alternative... . you can use milk with white vinegar or lemon juice added added, let it stand for about five minutes before using

oh thank you, i watched marthas kitchen today and she had a yummy looking cake recipe that used buttermilk, oddly thought the cake also have vinegar in it, im going to give it a go tomorrow, thanks heaps for that

You are most welcome. You can use vinegar OR lemon juice depending on what you have. I make buttermilk scones which are just delicious and they stay soft and moist even the next day. Let me know if you want the recipe.
