I want to make this for Christmas Day.I see that some recipes say to cover ice cream with the meringe and then freeze it before browning but some say cover in meringe and bake.Has anyone tried doing it by freezing the meringe and did it come out OK.Would make it easier on the day if I only had to cook it and prepare the day before

Yes - the meringue freezes well.Doesn't really go all that hard but it works perfectly.You could easily make it a day or two ahead and pop in the hot oven on Christmas day (or torch, if you have one).

Thanks gardie yes I will freeze it then as it will make it so much easier on the day
