Kitchen experiments. Do you?

I was musing in my kitchen earlier and wanted to make a nice caramel filling for some tarts I was making.

Not having the "correct" ingredients as per the book I decided to experiment a little.

The results are astounding, the smoothest yummiest golden 'caramel' filling I've ever tasted.

So thought I'd better share the recipe I used for others to try.

3 cups white sugar.
1/3 cup water
1 Cup Yoghurt.
1 Dessertspoon of brown vinegar.
25g of butter.

Place all into a suitable pot and slowly bring to the boil.
Then I turned the heat down till it was just gently bubbling and let it cook that way for 2 hours. - Seems a long time but the results are well worth it.

I did boil rapidly for 20 minutes about half way through.

Not sure if all the long times are essential but I'll keep doing it this way until I experiment more sometime in the future.

i do the same. make things up as i go along. the other day i made mini curried chicken and mixed vege pies. had some roast chicken left over and so after getting an idea off here i started making a chicken curry then remembered i had some pastry left over and kinda got carried away. i just chucked in some mixed veges too for added bonus for the kids.
